Cheesecake, plain and simple.

cheesecake with strawberry sauce

Preheat oven to 350 degrees.

for the crust

2 cups graham cracker crust

1 stick butter melted

1 teaspoon vanilla extract

Mix all ingredients together and press into spring-form pan.  Use a straight sided glass or measuring cup to press mixture up the sides of the pan.  Chill crust while you prepare the filling.

for the filling

3 packages (8 oz. each) of cream cheese at room temperature

1 cup sugar

3 large eggs

1 cup heavy cream

1 teaspoon vanilla extract

Combine cream cheese and sugar in bowl of food processor and cream until smooth.  Add eggs, one at a time.  Scape down sides of bowl.  Add cream and vanilla.

Wrap outside of pan with several layers of aluminum foil to keep water tight while in water bath.  Pour batter into prepared pan and place in larger pan.  Pour boiling water into larger pan until it comes almost half way up the sides of the cheesecake pan.

Bake 60-65 minutes.  Turn heat off and allow cake to cool in oven for one hour.  After one hour, remove from oven, remove foil, and cool completely on rack.

for the sauce

1 box of frozen strawberries (could use any berry you like)

juice of one lemon

2 Tablespoons sugar

In a small saucepan, combine all ingredients and simmer over medium heat for 5 minutes.  Fruit will begin to break down slightly.  Leave to cool before spreading on cheesecake.

    This is my new favorite cheesecake recipe!! Thank you so much — it is smooth, creamy, and delicious!
    Also, I love the graham cracker crust — so many times cheesecakes skimp on the crust, not yours!
    I used vanilla bean paste in place of the extract. It was my first time using the product and certainly not the last — it gives a more pronounced flavor and beautiful flecks of vanilla bean throughout the cake – YUM!

    Great! So glad you liked it. I love love love vanilla paste, but it’s tough to come by around here. I always stock up on paste and vanilla powder whenever I see it!
